Iced Apricot Veg CD DP 35mins plus freezing
Serves 4 Cold Vegetarian Vegan Fruit Dessert Ices Gluten Wheat Dairy Free Eggless
Ingredients 450g/1 lb Fresh Apricots 600ml/20 fl.oz Water 225g/8 oz Caster Sugar 2 tbsp Lemon Juice
Instructions
1. Wash the apricots and remove the stones. Bring the water to the boil then add the apricots and cook for 5 minutes. Cool.
2. Press through a sieve or blend in a food processor. Add the lemon juice then pour into ice cube trays. Freeze for at least 3 hours.
3. To serve, remove from trays and place into individual serving glasses.
