Irish Lemon Pudding Veg

Serves 4 Hot Cold Vegetarian Dessert Ireland Europe
Ingredients:
100g/4oz Butter
175g/6oz Caster Sugar
4 Eggs, separated
The grated rind and juice of 1 Lemon
3 tbsp Plain Flour
300ml/10fl.oz. Milk
1 tbsp Icing Sugar
Instructions

Preheat the oven to 200C, 400F, Gas Mark 6 and lightly great an 18cm/7 inch soufflé
Dish.

In a large mixing bowl, cream together the butter and sugar until light and
fluffy.

Add the egg yolks and beat until well blended. Add the lemon rind and juice and
mix well.

Gradually stir in the flour then add the milk a little at a time and beat until
well

In another bowl, whisk the egg whites until stiff then gradually fold into the

Transfer to the greased soufflé dish, sprinkle with the icing sugar then place
