Irish Lemon Pudding  Veg  HT  CD  DP  British  60mins


Serves  4   Hot  Cold  Vegetarian  Dessert  Ireland  Europe



   100g/4oz Butter

   175g/6oz Caster Sugar

   4 Eggs, separated

   The grated rind and juice of 1 Lemon

   3 tbsp Plain Flour

   300ml/10fl.oz. Milk

   1 tbsp Icing Sugar




1. Preheat the oven to 200C, 400F, Gas Mark 6 and lightly great an 18cm/7 inch soufflé Dish.


2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.


3. Add the egg yolks and beat until well blended. Add the lemon rind and juice and mix well.


4. Gradually stir in the flour then add the milk a little at a time and beat until well mixed.


5. In another bowl, whisk the egg whites until stiff then gradually fold into the flour and sugar mixture until well incorporated.


6. Transfer to the greased soufflé dish, sprinkle with the icing sugar then place the dish in a roasting pan containing 2.5cm/1 inch of hot water.


7. Bake for 40-50 minutes until risen and golden. Serve hot or cold.
