Lime and Mascarpone Torte Veg CD 45mins plus chilling Serves 4 Cold Vegetarian Dessert Eggless
Ingredients 200g/7oz Digestive Biscuits, crushed 50g/2oz Butter 450g/1lb Mascarpone Cheese 50g/2oz Icing Sugar Zest and juice of 2 Limes Grated Plain Chocolate to decorate Shredded zest of 1 LimeInstructions 1. Melt the butter in a pan then stir in the crushed biscuits. Press into the base of a 18cm/7 inch spring sided, loose-bottomed cake tin.
2. In a bowl, beat together the mascarpone, icing sugar, lime zest and juice, and spread over the biscuit base. Chill for 30 minutes.
3. To serve - decorate the top with grated chocolate and shredded lime zest.
