Serves 8 Cold Vegetarian Fruit Dessert Eggless England British Europe
Ingredients:
675g/1˝lb Mixed Berries (e.g. Blackberries,
Raspberries,
Loganberries Caster
Sugar
450g/1lb day old Wholewheat Bread, crusts
removed
Instructions
1. Place the fruit in a 1.5L/2˝ pint pudding basin and lightly mash with a fork. Sweeten to taste with sugar.
2.
Tear the bread into small pieces add to the mould, packing it down until full.
and allowing the juices and fruit to mingle with the bread.
3.
Cover with foil then place a plate with a weight on the top. Refrigerate
overnight.
4.
To serve - spoon it directly
from the mould. Serve with double
cream.
