Paw Paw and Banana Sorbet Veg CD 20mins plus freezing
Serves 4 Cold Vegetarian Fruit Dessert Ices Gluten Wheat Dairy free
Ingredients: 2 Ripe Paw Paws, deseeded, skinned and chopped 2 Bananas, peeled and chopped Juice of 2 Limes 150g/5oz Caster Sugar 2 Egg Whites
Instructions
1. Place the bananas and paw paw in a food processor together with the lime juice and sugar. Process to form a smooth purée. Transfer to a large bowl. 2. In another bowl, whisk the egg whites until fairly stiff then fold into the fruit purée. Pour into an ice cube tray and freeze until firm. 3. To serve - remove the cubes of sorbet from the tray and pile into tall glasses.
