Ricotta Dolce (cheesecake)

6 Cold Dried Fruit

pinch of salt
tbsp Plain Flour
Soft Brown Sugar
teasp Grated Orange Zest
Candied Orange Peel
tbsp Icing Sugar
Heat the oven to 190C, 135F, Gas mark 5 and grease a 20cm/8 inch round,
loose bottomed cake tin.
Mix together the Ricotta, salt, flour, brown sugar, egg yolks and orange zest.
Mix in the raisins and candied orange peel.
Whisk the egg whites until stiff but not dry and fold into the mixture with a
metal spoon. Turn into the greased tin and bake in the
centre of the oven for 40 minutes or until firm
Remove the from the oven, allow to cool, and place on a serving dish. Sprinkle
with cinnamon and icing sugar before serving.
