Ricotta Dolce (cheesecake) Veg CD 50mins plus cooling Serves 6 Cold Dried Fruit Vegetarian Dessert Pudding
Ingredients 450g/1lb Ricotta Cheese A pinch of salt 1 tbsp Plain Flour 100g/4oz Soft Brown Sugar 2 Eggs, separated 1 teasp Grated Orange Zest 25g/1oz Raisins 25g/1oz Candied Orange Peel ½ teasp Cinnamon 2 tbsp Icing Sugar
Instructions
1. Heat the oven to 190C, 135F, Gas mark 5 and grease a 20cm/8 inch round, loose bottomed cake tin.
2. Mix together the Ricotta, salt, flour, brown sugar, egg yolks and orange zest. Mix in the raisins and candied orange peel.
3. Whisk the egg whites until stiff but not dry and fold into the mixture with a metal spoon. Turn into the greased tin and bake in the centre of the oven for 40 minutes or until firm when tested.
4. Remove the from the oven, allow to cool, and place on a serving dish. Sprinkle with cinnamon and icing sugar before serving.
