Steamed Ginger Pudding Veg

Preserved Stem Ginger, chopped
A little milk
1. In a bowl,
cream together the butter and sugar until soft and pale. Gradually
add the eggs and mix well then add the flour, powdered
ginger and preserved ginger. Beat thoroughly
with a wooden spoon , adding enough milk to form a mixture
which drops from the spoon when lightly tapped.
2. Grease a
900ml/1 ½ pt pudding basin and pour in the mixture. Cover with greaseproof
paper, secure with string and place in a steamer or a large saucepan with
enough boiling water to come to within 5cm/2 inches on the top of the basin.

up as necessary.
