Steamed Ginger Pudding Veg HT DP British 105mins Serve 4 Hot Vegetarian Dessert Puddings Britain Europe
Ingredients: 75g/3oz Butter 75g/3oz Caster Sugar 2 Eggs 100g/4oz Self-Raising Flour 1 teasp Powdered Ginger 50g/2oz Preserved Stem Ginger, chopped A little milk
Instructions
1. In a bowl, cream together the butter and sugar until soft and pale. Gradually add the eggs and mix well then add the flour, powdered ginger and preserved ginger. Beat thoroughly with a wooden spoon , adding enough milk to form a mixture which drops from the spoon when lightly tapped.
2. Grease a 900ml/1 ½ pt pudding basin and pour in the mixture. Cover with greaseproof paper, secure with string and place in a steamer or a large saucepan with enough boiling water to come to within 5cm/2 inches on the top of the basin.
3. Cook steadily for 1 hour 30 minutes keeping an eye on the water level and topping up as necessary.
