Steamed Pudding Veg HT DP British 105mins Serve 4 Hot Vegetarian Traditional Dessert Puddings Britain Europe
Ingredients: 75g/3oz Butter 75g/3oz Caster Sugar 2 Eggs 100g/4oz Self Raising Flour A little milk
Instructions
1. In a bowl, cream together the butter and sugar until soft and pale. Gradually add the eggs and mix well then add the and flour. Beat thoroughly with a wooden spoon, adding enough milk to form a mixture which drops from the spoon when lightly tapped.
2. Grease a 900ml/ 1 1/2 pt pudding basin and pour in the mixture. Cover with greaseproof paper, secure with string and place in a steamer or a large saucepan with enough boiling water to come to within 5cm/2 inches on the top of the basin.
3. Cook steadily for 1 hour 30 minutes keeping an eye on the water level and topping up as necessary.
Serve hot with custard or another sweet sauce. As an alternative, you can place jam or treacle in the bottom of the basin before adding the pudding mixture.
