In a bowl, cream together the butter and sugar until soft and pale. Gradually
add the eggs and mix well then add the flour. Beat thoroughly with a wooden
spoon , adding enough milk to form a mixture which drops from the spoon when
2. Grease a 900ml/30fl.oz. pudding basin and pour the golden syrup into the
bottom. Add the pudding mixture, cover with greaseproof paper, secure with
string and place in a steamer or a large saucepan with enough boiling water to
come to within 5cm/2 inches on the top of the basin.
Cook steadily for 1 hour 30 minutes keeping an eye on the water level and
topping up as necessary.
Serve hot with
