Syllabub Veg CD DP 15mins plus chilling Serves 4 Cold Vegetarian Alcohol DessertIngredients: Grated rind of 3 Lemons 3 tbsp Sherry 1/2 teasp Ground Mixed Spice 75g/3oz Caster Sugar 390ml/13fl.oz. Milk Whipped Cream to serve Grated Nutmeg to serveInstructions 1. In a very deep bowl, mix the lemon rind, wine, sherry, mixed spice and sugar. Stir until the sugar dissolves then cover and place in the fridge, preferably overnight to macerate.
2. The next day, heat the milk to blood temperature then pour onto the sherry mixture from a height, without stirring, so the mixture froths. Allow to cool then chill.
3. Transfer to chilled glasses. Top with whipped cream and a little grated nutmeg. Serve immediately.
