Welsh Amber Pudding Veg HT DP British 35mins
Serves 6 Hot Vegetarian Dessert Pudding Wales Britain Europe
Ingredients 225g/8oz Shortcrust Pastry
2 Eggs
2 Egg Yolks 50g/2oz Sugar
The grated Zest
of 1/2 Lemon
2 tbsp fine-cut
Marmalade
100g/4oz Butter,
Melted
Instructions
1. Preheat the oven to 220C, 425F, Gas Mark 7.
2. Roll the pastry out on a floured surface to 5mm/1/4 inch and use to line a 20cm/8-inch flan tin. Line the pastry case with parchment paper, fill with baking beans and bake for 10 minutes.
3. Meanwhile, in a large mixing bowl, beat together the eggs, egg yolks
and sugar,
4. Remove the baking beans and parchment paper from the pastry case and
