Tzatziki    Veg   CD  HD ACC  Greek 10mins

Serves 4-8 as part of a Mezethes plate    Cold  Vegetable Vegetarian Appetiser Starter Hors d'oeuvre  Accompaniment   Dips  Gluten Wheat Free  Eggless  Greece Mediterranean Europe

1 Large Cucumber
4 Garlic Cloves, crushed
Salt and white Pepper
A squeeze of Lemon Juice
300ml/10fl.oz. Plain Yoghurt
1 tbsp Olive Oil
1 tbsp finely chopped fresh Mint


1. Peel the cucumber thinly cut in half lengthways, scoop out the seeds and discard.

2. Chop the flesh finely then place between several layers of kitchen towel and press hard to remove as much moisture as possible.

3. Transfer the squeezed cucumber to a bowl together with the remaining ingredients and mix until well blended. Serve chilled with fingers  of Greek bread.
