Roquefort Cheese without the rind
fl.oz. Soured Cream
tbsp Lemon Juice
Spring Onion, white part only, finely chopped
Sieve the cheese into a bowl. Work in the soured cream and lemon juice,
little by little, until smooth. Lastly add the finely chopped onion.
Pour into a sterilised jar with a screw-top lid. Close and shake well. Chill for 2
hours. Shake again before use.
