Spaghetti with Sardines HT

As tinned sardines are a good source of Omega-3 fatty acids, this
is a great dish for the whole family. Don't remove the bones from the sardines
as they won't be discernable once the dish is cooked and add valuable calcium.
1 tbsp Oil
1 Onion, chopped
1 x 400g/14oz tin Chopped Tomatoes
1-2 Garlic Cloves, crushed
Salt and Black Pepper
2 x 100g/4oz tins Sardines, drained
25g/1oz Pine Nuts
1. Heat the oil and butter in a saucepan, add the onion and fry until soft. Add
the tomatoes, garlic, sardines, pine nuts, salt and black pepper, stir to break
up the sardines then simmer gently for 20 minutes.
2. Meanwhile, bring a large pan of salted water to the boil, add the pasta and
cook for 10-12 minutes until tender.
3. To serve - drain the pasta well and return to the rinsed out pan. Add the
sardine mixture, mix well and serve immediately.
