Bacon Wrapped Whole Sea Trout Recipe

Serves 4       Hot Fish Pork Herbs Spring Cooking Main Course Gluten Wheat Free Eggless

1 Whole Sea Trout, (about 2.7kg/6lb), scaled and gutted
Salt and black pepper
3 Thin Slices of Lemon
5 Sprigs of Thyme
2 Sprigs of Rosemary
12 thin Streaky Bacon Rashers
Olive Oil
Freshly Squeezed Lemon Juice


1. Preheat the oven to 200C, 400F,
Gas Mark 6. Wash the fish inside and out and pat dry with kitchen paper. Make 3 or 4 diagonal cuts on both sides of the fish, season all over, both inside and out with salt and pepper then place the lemon slices and springs of herbs inside the cavity.

2. Place the bacon rashers in a row on a chopping board, making sure their sides slightly overlap then place the trout in the middle and wrap the bacon around it.

3. Transfer the fish to a lightly oiled baking tray, placing the cut ends of the bacon underneath so they are held in place during the cooking process. Drizzle with a little olive oil bake for 25-30 minutes, or until the fish is cooked through. The flesh should come away easily from the bone.

4. Drizzle with a little extra olive oil and lemon juice just before serving.

Excellent served with spring season new potatoes and asparagus.
