Citrus Orange Roughy HT MC 30mins
Serves 4 Hot Fish Fruit Herbs Main Course Eggless
Ingredients 450g/1lb Orange Roughy Fillets 300ml/10fl.oz. Milk Salt Plain Flour 2 tbsp Olive Oil 3 Garlic Cloves, very finely chopped 3 tbsp Lime Juice 2 tbsp Lemon Juice 2 tbsp Orange Juice 1 tbsp freshly chopped Parsley 25g/1oz Butter
Instructions
1. Place the fish in a shall dish, pour the milk over the filets and leave to soak for 10 minutes.
2. Remove the fish from the dish, season with salt and coat with flour.
3. Heat 1 tablespoon of the oil in a frying pan until hot, add the fish and cook for 3-4 minutes on each side until golden brown.
4. Transfer the fish to a serving platter and keep warm.
5. Wipe frying pan clean, add the remaining oil and the garlic and heat until hot.
6. Turn the heat off then add the lime juice, lemon juice, orange juice, parsley, and butter and swirl around until just creamy. Pour over fish and serve immediately.
