Coconut Fried Prawns HT MC 20mins
Serves 4 Hot Shellfish Seafood Spices Main Course
Ingredients 75g/3oz Freshly Grated Coconut 50g/2oz Fresh White Breadcrumbs 3 Eggs, beaten 120ml/4fl.oz. Milk 1 teasp Cayenne pepper 32 large Raw Prawns (shrimp), peeled and deveined Vegetable oil for shallow frying
Instructions
1. Place coconut and bread crumbs in a shallow dish and mix to blend well. Set aside.
2. In another shallow dish. beat together the eggs, milk and cayenne pepper.
3. Dip the prawns into the egg mixture then roll in the breadcrumb mixture to coat evenly.
4. Heat the oil until hot then fry the coated prawns until golden brown on all sides. Drain on kitchen paper and serve hot with a dipping sauce.
