Cod with Parma Ham HT MC 25mins
Serves 4 Hot Fish Pork Herbs Main Course
Ingredients 2 large fillets of Cod, skinned 4 slices of Parma Ham 2 slices of White Bread 25g/1oz Parsley 25g/1oz Fresh Coriander 4 Garlic Cloves, Salt and Pepper 1 Egg, beaten 2 tbsp Olive Oil
Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly oil a baking tray.
2. Place the bread, garlic, salt, pepper , parsley and coriander in a food processor and process until you have a green breadcrumb mixture.
3. Cut cod fillets in half and make 4 diagonal cuts in each.
4. Cut each slice of Parma ham into 4 pieces and stuff them into the cuts then brush the fillets with the beaten egg and press the breadcrumb mixture on top of the fillets.
5. Place the fillets on the baking tray, drizzle with olive oil and bake for 15 minutes or until cooked through. Serve immediately.
