Garlic Baked Cod HT MC 60mins
Serves 4 Hot Fish Alcohol Main Course Healthy Eating Gluten Wheat Dairy Free Eggless
Ingredients 450g/1lb Thick Cod Fillets 3 Garlic Cloves, finely sliced 3 Bay Leaves, torn into pieces Salt and Pepper 3 Tomatoes, sliced 1 Red Capsicum (sweet pepper), sliced in rings 4 tbsp Olive Oil 4 tbsp White Wine
Instructions
1. Preheat the oven to 150C, 300F. Gas2 and lightly oil a shallow ovenproof dish.
2. Cut the fish into 5cm/2-inch squares, make an incision in each square and insert a slice of garlic and a piece of bay leaf into the cut.
3. Place the fish in a single layer in the shallow dish and season well with salt and pepper.
4. Arrange the peppers and tomatoes on top of the fish, pour over the oil and wine then cover with foil and bake for 40-50 minutes. Serve hot.
