Serves 4 Hot Fish Vegetables Alcohol Main Course Gluten Wheat Dairy Free Eggless Spain Europe
Ingredients 1kg/2lb Tuna Steaks or Bonito 50 ml/2fl.oz. Olive Oil 1 Onion, chopped 4 Garlic Cloves, chopped 2 Capsicums (sweet peppers), cut into strips 450g/1lb Tomatoes, peeled, seeded and chopped 2 teasp Paprika Salt and Black Pepper 1 small Chilli Pepper 1kg/2lb Potatoes, diced 210ml/7fl.oz. White Wine 90ml/3fl.oz. Water
Instructions
1. Cut the tuna into chunks, discarding the bone.
2. Heat the oil in a flameproof casserole add the onions, garlic and peppers, and sauté until soft.
3. Add the tomatoes, paprika, salt, pepper and chili and continue to cook over a medium heat for 5 minutes, stirring from time to time.
4. Add the potatoes and cook, stirring for 5 minutes, then add the wine and water and mix well.
5. Cover the casserole and cook on a medium heat until the potatoes are nearly tender, about 20 minutes.
6. Add the fish to the casserole, cover and cook another 5 minutes, or until fish flakes easily.
7. Remove from the heat and allow the casserole rest, covered, for 5 minutes before serving.
