Martinique Blaff HT MC West Indian 30mins plus marinating
Serves 4 Hot Fish Main Course Gluten wheat Dairy free Eggless Caribbean West Indies
Ingredients The juice of 8 Limes 1 Scotch Bonnet Pepper 2 Spring Onions, chopped 4 Garlic Cloves, crushed 4 Fish Steaks (Haddock, Cod, swordfish, Monkfish etc) Vegetable Oil for shallow frying Water
Instructions
1. Place the lime juice, scotch bonnet pepper (cut in half if you want the dish to be very hot), onion and garlic in a large shallow dish and mix well. Add the fish and turn to coat then refrigerate and leave to marinate for 1 to 24 hours.
2. Heat the vegetable oil in a large frying pan until hot, add the drained fish steaks and brown on both sides.
3. Add the marinade, cover and simmer for 8-15 minutes depending on thickness of steaks, adding a little water if necessary.
4. Serve hot with boiled green plantains or rice.
