Garlic Cloves, crushed
teasp Sea Salt
teasp Ground Cumin
teasp Cayenne pepper
freshly chopped Coriander
teasp Olive Oil
juice of 1 Lemon
lb Red Snapper Fillets
Place the garlic, salt, spices , coriander, olive oil and lemon juice in a small
bowl and mix until well blended.
Place the fish in a shallow ovenproof dish and cover with the garlic mixture.
Leave to marinate for one hour, turning from time to time.
Preheat the oven to 200C, 400F, Gas Mark 6. Turn the fish in the marinade
to coat well then bake, uncovered, for 15-20 minutes or until fish is cooked
through. Serve immediately.
