small Red Onion, chopped
tbsp Freshly Chopped Chives
oil for shallow frying
Place the crabmeat, potatoes, onions, chives, egg yolk, egg whites,
half the chopped
walnuts and 1/2 the breadcrumbs in a bowl. Season with salt and pepper and mix
until well blended.
Form the mixture into 8 flat patties and set aside.
Finely chop the remaining walnuts and mix together the remaining breadcrumbs
in another bowl.
Coat the crabcakes with the breadcrumb mixture, pressing it firmly on all sides.
Heat the oil in a large frying pan and fry the crab cakes over a medium/high
heat for about 10 minutes or until golden and crispy on all sides.
Drain on kitchen paper and serve
