Parmesan Grilled Halibut

Ingredients
Butter for greasing
4 Skinless Halibut Fillets
25g/1oz Freshly grated Parmesan Cheese
25g/1oz Butter, softened
1 tbsp Mayonnaise (Check Ingredients label)
1 tbsp Fresh Lemon Juice
2 Spring Onions, (Green and white parts) finely chopped
Salt
A Dash of Hot Pepper Sauce (Check Ingredients label)
Instructions
1. Preheat the grill to hot and line the grill pan with buttered aluminium foil.
2. Arrange the halibut fillets in the grill pan, season with salt and pepper and
cook for 4 – 5 minutes on each side until cooked through.
3. Meanwhile, place the parmesan, butter, mayonnaise, lemon juice, onions,
salt and hot pepper sauce in a mixing bowl and mix until well blended.
4. Once the fish is cooked, spread the Parmesan cheese mixture evenly over the
fillets and continue to grill for 2 - 3 minutes or until topping is bubbly and
golden brown.
