Pollack Au Gratin
4 Hot Fish Dried
1 tbsp Chutney
1. Preheat the
oven to 180C, 350F, Gas mark 4.
2. Skin the
fish and place in a buttered dish the some milk. Cover with buttered
greaseproof paper and bake in the centre of the oven for 20 minutes.
3. Strain off
the liquor and make up to 240ml/8 fl.oz. with milk.
4. Melt the
butter in a pan and stir in the flour. Cook for 1-2 minutes. Gradually add
the milk stirring all the time. Bring to the boil and cook until thickened. Remove from heat and stir in the cheese, chutney and
sultanas. Season to taste.
5. Pour the
sauce over the fish and return to the oven for 10 minutes to heat through.
