Red Mullet Parcels

Ingredients:
4
Whole Mullet, scaled, gutted and cleaned
2 tbsp Olive
Oil
8 Slices of Lemon
1 Green Capsicum
(sweet pepper) deseeded and cut into strips
2 Garlic Cloves,
halved
Salt and Black
Pepper
Instructions
1.
Preheat the oven to 200C, 400F, Gas Mark 6. Cut 4 squares of foil large
enough to enclose each fish.
2. Brush
the foil with olive oil then place 2 lemon slices, a few strips of peppers, half
a garlic clove and one fish on each.
3. Brush each
mullet with a little olive oil, season with salt and pepper and loosely wrap
each into a secure parcel.
4. Place the
parcels in a baking tin containing 2.5cm/1-inch of boiling water then bake for
25 minutes. Serve hot.
