Salmon and Watercress Flan

Ingredients 200g/7oz Shortcrust Pastry 50g/2oz Watercress, roughly chopped
175g/6oz Fresh Cooked Salmon, flaked
Instructions
1. Preheat the oven to 190C, 375F, Gas mark 5. Line a 20cm/8 inch flan tin with the pastry. Prick the base with a fork and line with greaseproof paper, fill with baking beans and bake for 15 minutes.
2. Remove the flan case from the oven and take out the beans and paper.
3. Spread the watercress evenly over the bottom of the flan case then place the flaked salmon evenly over the watercress.
