Oriental Salmon Vegetable and Noodle Parcels Recipe

An easy to make main course of fresh salmon flavoured with ginger, garlic and chilli with fresh vegetables on a bed of sesame coriander noodles and baked in a parcel.

Ingredients

2.5cm/1-inch piece of fresh Root Ginger, grated
2 Garlic Cloves , crushed
4 tbsp Soy Sauce
2 tbsp Mirin

2 tbsp Rice Wine

2 tbsp Sweet Chilli Sauce
4 Fresh Salmon Fillets (about 75g/3oz each),
For the Noodles
500g/1lb cold cooked Medium Rice Noodles

2 tbsp Sesame Oil
4 tbsp Freshly chopped Coriander

For the vegetables

4 Large Spring Onions , thinly sliced on the diagonal
1 Large Carrot, very thinly sliced or cut into julienne
Courgette, thinly sliced or cut into julienne

Instructions

 

1. Preheat the oven to 200C, 400F, Gas Mark 6. Place the ginger, garlic, soy sauce, mirin, rice wine and chilli sauce in a small dish, mix well then add the salmon, turn to coat and set aside.


2. Place the noodles, coriander and sesame oil in a bowl, mix well then divide between four 45cm/18" foil squares, placing in the centre of each.

 

3. Arrange the mixed vegetables on top of the noodles.

 

4. Place one salmon fillet on top of each mound of noodles/vegetables, pouring the remaining soy mixture over the top.

5. Pull up the edges of the foil and fold over to create a completely sealed parcel, making sure you leave plenty of space around the contents, then place the parcels on a baking tray and bake for 20-30 minutes, depending on the thickness of the fish.

 

To serve - transfer each parcel onto a plate and allow the diners to open their own or carefully open each parcel and slide the contents onto individual serving plates, keeping the layers in tact.

Tips, Options and Substitutions

 

If the fish fillets are thin, you may wish to blanch the vegetables before  adding to the parcels and reduce the cooking time by 5-10 minutes.

 

You can fold the parcels into any shape you like round, square, oblong, triangle

 

You can use parchment paper instead of foil

 

If you want more heat, add some finely chopped chillies
