Scampi Provencal HT MC French 40mins
Serves 4 Hot Shellfish Seafood Alcohol Herbs Main Course Gluten Wheat Dairy Free Eggless France Europe
Ingredients 2 tbsp Olive Oil 1 Small Onion, chopped 2 Garlic Cloves, finely chopped 3 Large Tomatoes, diced 2 tbsp Tomato Paste 1 tbsp Freshly chopped Parsley or Basil 1/2 tbsp Freshly Chopped Oregano 180ml/6fl.oz. Dry White Wine (check manufacture) 60ml/2fl.oz. Water Salt and White Pepper Sugar 450g/1lb raw Prawns (Shrimp) or Scampi, peeled and deveined
Instructions
1. Heat the oil in a frying pan, add the onions and garlic and sauté until soft and transparent.
2. Add the tomatoes, herbs and tomato paste and cook over a medium heat for 10 minutes, stirring occasionally.
3. Add the wine and water and continue to cook, stirring from time to time, for a further 10 minutes.
4. Season with salt and pepper and add a pinch of sugar if too acidic.
5. Add the prawns/scampi mixing well and cook for several minutes until pink.
