seafood e.g. Prawns, Squid, meaty fish Fillets (marlin, tuna, sea bass, snapper)
1 Red Onion, finely chopped
1 Garlic Clove, crushed
1 Chili, deseeded and chopped
Salt and black pepper
The Juice of 5 Lemons
The juice of 5 limes
2 tbsp freshly chopped Coriander (Cilantro)
1. Prepare the
peel, de-vein and wash in cold water.

2. Bring a large
pan of salted water to the boil, add the prawns and squid and poach 30
seconds. Remove from the heat, drain well and cool in iced water. Drain well and
dry on kitchen paper.
3. Place all
the ingredients in a mixing bowl and mix to coat thoroughly. Refrigerate for 4-6
hours before serving, turning several times during marinating.
