Spiced Herring
CD MC Finnish 30mins plus marinating Finnish Name: Maustesilli
Serves 4 Cold Fish Spices Herbs Main Course Healthy Eating Gluten Wheat Dairy Free Eggless Finland Scandinavia Scandinavian Europe
Ingredients: 450g/1lb Fresh Herring Fillets 1 Onion, very thinly sliced 240ml/8fl.oz. White Wine Vinegar 120ml/4fl.oz. Water 50g/2oz Sugar 1 Bay Leaf ½ teasp Dill Seed ¼ teasp Dry Mustard 8 Whole Allspice Berries 1 teasp Salt
Instructions
1. Cut the fillets into 2.5cm/1-inch pieces then place in a large jar or serving dish layering alternately with the sliced onions. Set aside.
2. Place the remaining ingredients in a saucepan, bring to the boil then reduce the heat and simmer for 15 minutes.
3. Remove from the heat, allow to cool to lukewarm then pour over the layered fish and onions.
4. Cover and refrigerate for 1 to 2 days before serving cold.
