Squid Satay
HT MC Malaysian 30mins plus marinating

Ingredients
1 tbsp Cumin Seeds
2 tbsp Coriander Seeds
3 Small Dried Chillies
2 tbsp Fish Sauce
2 tbsp Lime Juice
1 tbsp Brown Sugar
900g/2lb Baby Squid Tubes, cut into 2.5cm/1-inch wide rings
Instructions
1. Heat a small frying pan until hot then ass the cumin, coriander and dried
chillies and toast until fragrant. Remove from the pan and grind into a powder.
3. Place the ground powder in a small bowl together with the fish sauce, lime
juice and brown sugar. Mix well then add the squid rings stirring to coat. Set
aside and leave to marinate for 30 minutes, turning from time to time.
4. Preheat the grill to very hot . Thread the squid onto short bamboo skewers
then grill for about 2 minutes on each side. Serve with a dipping sauce of your
choice.
