Student Herby Grilled Mackerel HT MC 15mins Serves 1 Fish Seafood Herbs Main Course Healthy Eating Dairy Gluten Wheat Dairy Free EgglessIngredients

Medium Mackerel
1 tablespoons Olive Oil Salt
and Black Pepper 2 teaspoons Dried Mixed Herbs

Instructions
1.
Preheat the grill to hot and line the grill pan with aluminium foil.
2.
Wash the mackerel but leave the heads on then dry on kitchen
paper.
3.
Make 2-3 diagonal cuts on each side of the fish (about 5mm/¼ inch deep)
then
season the fish, both
inside and out, with salt and pepper.
4. Place the fish directly in the grill pan then sprinkle half the herbs over the top. Drizzle a little of the olive oil over the fish, add a squeeze of lemon juice and grill for 5-6 minutes basting once or twice.
5. Turn the fish over, sprinkle with the remaining herbs, lemon juice and more olive oil and cook for a further 5-6 minutes, basting from time to time.
6. To serve - transfer to a heated serving platter and garnish with lemon wedges and drizzle with the remaining olive oil and a squeeze of lemon juice. Serve immediately.
