Stuffed Cuttlefish HT MC Italian 50mins
Serves 4 Hot Seafood Dried Fruit Main Course Gluten Wheat free Italy Mediterranean Europe
Ingredients 2 Eggs, lightly beaten 100g/4oz Freshly grated Parmesan Cheese 100g/4oz Mozzarella Cheese, cubed 50g/2oz Sultanas Salt and Pepper 2 tbsp Olive Oil 1kg/2.2lb Cuttlefish, Cleaned 1 Garlic Glove, crushed 2 Chilli Peppers, deseeded and chopped 2 teasp Fresh Thyme Leaves 1x 400g/14oz tin Chopped Tomatoes
Instructions 1. Place the eggs, cheeses and sultanas and mix well, seasoning with salt and pepper. 2. Remove the tentacles from the cuttlefish and set aside. Fill the cuttlefish pouches with the cheese mixture and sew up tightly with white thread. Set aside.
3. Heat the oil in a large frying pan, add the garlic, chili peppers and reserved tentacles and sauté for 2 minutes. 4. Add the stuffed cuttlefish and cook over a high heat for a few minutes, turning frequently.
5. Add the tomatoes, thyme, salt and plenty of black pepper, mix well then reduce the heat, partially cover and cook gently for 20 minutes. Serve immediately.
