Swordfish Skewers HT MC Turkish 20mins plus marinating

Serves 4 Hot Fish Main Course Healthy Eating Gluten Wheat Dairy Free Turkey Europe Asia Asian
Ingredients 675g/1-1/2lb Swordfish, cut into 5cm/2-inch cubes Salt 1 tbsp Lemon Juice 1 tbsp Olive Oil 1 teasp Cayenne Pepper 12 Bay Leaves For the Baste The juice of 1 Lemon 60ml/2fl.oz Olive Oil 1 tbsp freshly chopped Parsley
Instructions 1. Place the fish in a shallow dish together with the lemon juice, oil, salt, pepper and bay leaves. Mix to coat the fish well, cover with clingfilm and set aside for at least 3 hours, turning from time to time.
2. After the marinating time, preheat the grill to hot and line the grill pan with aluminium foil.
3. Place the fish pieces onto short skewers, brush with some of the basting mixture and grill for 10 minutes, turning from time to time and brushing with the remaining basting mixture.
