Tequila Sea Bass HT MC Mexican 25mins plus marinating
Mexican Name: Filetes de Pescado Estilo Acapulco
Serves 4 Hot Fish Alcohol Main Course Dairy free Mexico Nth American North America
Ingredients 4 Sea Bass
fillets, about 2.5cm/1-inch thick
1. Place the tequila, lime juice, garlic, salt and olive oil in a shallow dish and mix well.
2. Add the fish, turn to coat well and leave to marinate for 30 minutes, turning once. Do not marinate for any longer.
4. Preheat the grill to high.
5. Remove fish from the dish, reserving the marinade and grill or sauté for 4-5 minutes on each side.
6. Meanwhile, place the remaining marinade in a small saucepan and bring to the boil.
7. To serve - transfer the fish to a heated serving platter and drizzle the boiled marinade over the top. Serve immediately with the tomato mixture.
