4 Sea Bass
fillets, about 2.5cm/1-inch thick
90ml/3fl.oz. Lime Juice
2 Garlic Cloves, finely minced
1 teasp Salt
4 tbsp Olive Oil
4 Large Tomatoes, deseeded and diced
1/2 Onion, finely chopped
1 Jalapeño Pepper, deseeded and finely chopped
4 tbsp freshly chopped Coriander
1. Place the
tequila, lime juice, garlic, salt and olive oil in a shallow dish and mix well.
2. Add the fish,
turn to coat well and leave to marinate for 30 minutes, turning once. Do
not marinate for any longer.
3. Place the tomatoes, onion, jalapeno and coriander in a mixing bowl, mix well
and set aside.
4. Preheat the
grill to high.
5. Remove fish
from the dish, reserving the marinade and grill or sauté for 4-5 minutes
on each side.
place the remaining marinade in a small saucepan and bring to the boil.
7. To serve -
transfer the fish to a heated serving platter and drizzle the boiled marinade
over the top. Serve immediately with the tomato mixture.
