For the filling
1 large Green Capsicum (Sweet pepper)
Salt and Pepper
2 x 200g/7oz tin Tuna Fish
4 tbsp Single
1. Deseed the
pepper and cut into 6mm/1/4- inch pieces. Blanch in boiling salted water for 1
minute. Drain well.
2. Melt the butter
in a medium saucepan, add the flour and cook over a medium heat for 2 minutes
3. Add the soured cream and single cream and mix well.
4. Blend in the
flaked tuna, prawns, blanched pepper, salt and pepper and stir over gentle heat
for a few minutes until warmed through. Do not boil.
5. To serve - divide the filling between the pancakes, roll or fold into
quarters and serve immediately.
