Tuna and Prawn Pancakes    HT  MC  45mins


Serves 4    Hot  Fish  Shellfish  Seafood  Main Course Pancake Day  Shrove Tuesday 

 

Ingredients

For the filling
1 large Green Capsicum (Sweet pepper)

25g/1oz Butter

25g/1oz Plain Flour 

Salt and Pepper
2 x 200g/7oz tin Tuna Fish

225g/8oz Peel Prawns

210ml/7fl.oz. Soured Cream

4 tbsp Single Cream


Instructions

 

1. Deseed the pepper and cut into 6mm/1/4- inch pieces. Blanch in boiling salted water for 1 minute. Drain well.


2. Melt the butter in a medium saucepan, add the flour and cook over a medium heat for 2 minutes stirring.


3. Add the soured cream and single cream and mix well.

 

4. Blend in the flaked tuna, prawns, blanched pepper, salt and pepper and stir over gentle heat for a few minutes until warmed through. Do not boil.


5. To serve - divide the filling between the pancakes, roll or  fold into quarters and serve immediately.
