Baked Halibut with Oranges HT MC 40mins Serves 4 Hot Fish Fruit Main Course EgglessIngredients: 4 Halibut Steaks Salt and Black Pepper 25g/1oz Butter 2 Oranges, peeled and segmented 150ml/5fl.oz. Milk For the Sauce 15g/½ oz Butter 15g/½ oz Plain FlourCooking liquor Instructions 1. Preheat the oven to 180C, 350F, Gas mark 4 and grease an ovenproof dish.
2. Arrange the halibut in the ovenproof dish, season with salt and pepper and place a knob of butter on each piece. Arrange the orange segments on and around the fish, pour over the milk, cover with greaseproof paper and bake for 20 minutes or until cooked through.
3. Remove the fish from the oven and pour the cooking liquor into a small jug or bowl. Keep the fish warm whilst you make the sauce.
4. In a saucepan, melt the butter then add the flour and cook for 1-2 minutes. Gradually add the cooking liquor, stirring all the time and cook until thickened.
5. To serve - arrange the halibut and orange segments on a warmed serving platter, pour over the sauce and serve immediately.
