Baked Plaice with Black Butter
4 Hot Fish Herbs Main Course Gluten Wheat Free
fillets of Plaice
of 1 lemon
tbsp Tarragon vinegar
finely chopped Parsley
1. Put the
fillets of fish on to a board and sprinkle with lemon juice and seasoning;
fold each in three and put in a buttered dish. Pour the rest of the lemon juice over the fish, cover with buttered greaseproof
and cook in the centre of the oven for 10-15
heat the butter in a small heavy pan until golden brown. Remove from
heat and cool.
3. Heat the
vinegar in another small pan until reduced by half the original quantity.
Stir in the butter and re-heat. Season and add the parsley.
4. Pour the
black butter over the fish and sprinkle with chopped gherkins.
