Cod with Apples

900g/2lb Cod Fillets
Large Onion, chopped
Apples, peeled and thinly sliced
½ teasp Brown sugar
teasp Mild Curry Powder
fl.oz Dry White Wine
1. Rinse the
fish and dry on kitchen paper. Sprinkle with lemon juice and leave for 10 minutes.
2. Preheat the
oven to 400F, 200C, Gas mark 6. Melt the butter in a saucepan and add
the onions and 2 of the sliced apples. Sprinkle with salt, pepper, sugar, curry powder and flour and cook, stirring until all are

wine and heat until the sauce thickens, stirring all the time. Remove
from heat. And transfer to a casserole.
4. Place the
fish on top and cook in the centre of the oven uncovered, for 15 minutes.

minutes until golden.
6. When the
fish has cooked, remove the fillets from the casserole and place on a warmed
serving platter. Add the brandy to the sauce and stir well.
7. To serve,
arrange the fried apples around the fish and pour the sauce over.
