Grilled Lobster HT MC 20mins Serves 4 Hot Shellfish Seafood Main Course Gluten Wheat Free Eggless Ingredients: 1 x 1.6kg/3-1/2lb Cooked Lobster 50g/2oz Butter 1 tbsp Fresh Thyme, chopped 1/4 teasp Cayenne Pepper Fresh Parsley to garnish
Instructions 1. Preheat the grill to hot. Cut the lobster in half lengthways and remove stomach sac and intestinal vein. Arrange lobster halves, flesh side up, on grill pan and grill for 2 minutes. 2. Ease the flesh away from shell with a grapefruit knife and cut into bite-size pieces. Dot with butter and sprinkle the thyme and cayenne over the top. 3. Grill for a further 5-8 minutes, basting from time to time. 4. To serve - arrange on a serving platter, spoon the juices over and garnish with parsley. Serve immediately with a sauce of your choice.
