Halibut Duglere HT MC 45mins Serves 4 Hot Fish Alcohol Main course Gluten Wheat freeIngredients: 25g/1oz Butter 1 Onion, chopped 2 Tomatoes, peeled and chopped 4 Halibut Steaks 150ml/5fl.oz. Dry White Wine (check manufacture) 15-ml/5fl.oz. Water Salt and Black pepper 1 teasp Cornflour 3 tbsp Single cream 1 tbsp Fresh Parsley, chopped Instructions 1. Preheat the oven to 220C, 425F, Gas mark 7. Melt the butter in a frying pan, add the onion and gently fry until golden. Add the tomatoes and cook for 5 minutes.
2. Pour the mixture into an ovenproof dish and place the halibut on top. Add the wine, water, salt and pepper. Cover and cook in the oven for 25 minutes.
3. Transfer the halibut onto a warm serving platter and keep warm. Pour the sauce into a saucepan. Blend the cornflour with a little water and add to the sauce. Bring to the boil, stirring all the time and boil for 2 minutes.
4. To serve - stir the cream and parsley into the sauce and pour over the fish.
