Lobster Mexicana HT MC Mexican 45mins
Serves 4 Hot Shellfish Seafood Main Course Eggless Mexico Nth America North American
Ingredients 300g/11oz cooked Lobster Meat 2 Tomatoes, chopped 50g/2oz Green Capsicums (sweet peppers), chopped 120ml/4fl.oz. Single Cream 1/2 teasp Ground Cumin 1/4 teasp Ground Allspice 1/8 teasp Paprika 100g/4oz Fresh Breadcrumbs 75g/3oz Butter, melted
Instructions
1. Preheat the oven to 190C, 375F, Gas Mark 5 and lightly butter a shallow ovenproof dish.
2. In a large mixing bowl, mix together the lobster meat, tomatoes and green pepper and arrange in the prepared dish.
3. In a measuring jug, blend together the spices and cream.
4. Pour 60ml/2fl.oz. of cream mixture over lobster mixture.
5. Mix the breadcrumbs with the melted butter then sprinkle over lobster mixture. Pour the remaining cream over crumbs then bake, uncovered for 30 minutes. Serve hot.
