Button Mushrooms, sliced
Onions, finely chopped
tbsp Olive Oil
Garlic Clove, crushed
and Black Pepper
tbsp White Wine Vinegar
Tomatoes, thickly sliced

Heat 2 tablespoons of the oil in a pan, add the onions, mushrooms and garlic and
sauté over a low
heat for 10 minutes, stirring frequently.
Meanwhile, wash the mackerel fillets and dry on kitchen paper.
Add the vinegar, salt and pepper to the pan of onions and mushrooms and boil
rapidly until the
Coat the fillets with flour then heat the remaining oil in a large frying pan.
Add the fish and fry for 5
minutes on each side. Drain on kitchen paper, transfer to a heated serving
platter and keep warm.
Add the thickly sliced tomatoes to the frying pan and fry for 2-3 minutes
To serve - spoon the onion and mushroom mixture over the top of the fish then
arrange the fried tomatoes
on top. Sprinkle a little salt and pepper over the tomatoes and serve
