Italian 40mins Serves 4 Hot Fish Main course Dairy Free Italy Europe
Ingredients: 900g/2lb
Mackerel Fillets 225g/8oz
Button Mushrooms, sliced 2
Onions, finely chopped 5
tbsp Olive Oil 1
Garlic Clove, crushed Salt
and Black Pepper 2
tbsp White Wine Vinegar 350g/12oz
Tomatoes, thickly sliced 2
tbsp Plain Flour
Instructions
1.
Heat 2 tablespoons of the oil in a pan, add the onions, mushrooms and garlic and
sauté over a low
heat for 10 minutes, stirring frequently.

Meanwhile, wash the mackerel fillets and dry on kitchen paper.

Add the vinegar, salt and pepper to the pan of onions and mushrooms and boil
rapidly until the

Coat the fillets with flour then heat the remaining oil in a large frying pan.
Add the fish and fry for 5

Add the thickly sliced tomatoes to the frying pan and fry for 2-3 minutes
without turning.
6. To serve - spoon the onion and mushroom mixture over the top of the fish then arrange the fried tomatoes on top. Sprinkle a little salt and pepper over the tomatoes and serve immediately.
