Mali Snapper HT MC West African 90mins Serves 4 Hot Fish Vegetables Grains Main course healthy eating Eggless Gluten Wheat Dairy free AfricaIngredients: 4 x 225g/8oz Snapper Fillets 1 Garlic Clove, crushed 2 Onions 1 Fresh Green Chilli, finely chopped 3 tbsp Fresh Parsley, chopped 3 tbsp Lemon Juice Salt and Black Pepper 2 Carrots, thinly sliced 1 Stick Celery, sliced 1 Small Cauliflower, divided into florets 225g/8oz Cabbage, shredded 2 tbsp Oil 4 tbsp Tomato Paste 1L/1-1/2pts Water 225g/8oz Long Grain Rice
Instructions 1. Wipe the snapper fillets and remove the skin. Finely chop 1 of the onions, wash, deseed and finely chop the chilli. Add to the garlic with the parsley, lemon juice and seasoning. Mix well.
2. Spread the mixture over the fish and leave to marinate for 30 minutes.
3. Meanwhile, slice the remaining onion. Heat the oil in a flameproof casserole, add onion and fry till transparent. Stir in tomato paste and water and bring to the boil. Add the vegetables and rice. Bring back to the boil, arrange the fish on top.
4. Cover tightly and simmer for 15-20 minutes till the fish and vegetables are tender and the liquid is absorbed. Carefully lift out the fish.
5. Place the rice and vegetables in a warmed serving dish and arrange the fish on top. Serve immediately.
