x 225g/8oz Snapper Fillets
Garlic Clove, crushed
Fresh Green Chilli, finely chopped
tbsp Fresh Parsley, chopped
tbsp Lemon Juice
and Black Pepper
Carrots, thinly sliced
Stick Celery, sliced
Small Cauliflower, divided into florets
tbsp Tomato Paste
Long Grain Rice
Wipe the snapper fillets and remove the skin. Finely chop 1 of the onions, wash, deseed and finely chop the chilli. Add to
the garlic with the parsley, lemon juice
and seasoning. Mix well.
Spread the mixture over the fish and leave to marinate for 30 minutes.
Meanwhile, slice the remaining onion. Heat the oil in a flameproof casserole, add onion and fry till transparent. Stir in
tomato paste and water and bring to the boil.
Add the vegetables and rice. Bring back to the boil, arrange the fish on top.
Cover tightly and simmer for 15-20 minutes till
the fish and vegetables are tender and
the liquid is absorbed. Carefully lift out the fish.
Place the rice and vegetables in a warmed serving dish and arrange the fish on top. Serve immediately.
