Potted Herrings in Guinness CD

Ingredients
8 Fresh Herrings, filleted
600ml/1pt Guiness
1 Onion, sliced
150ml/5fl.oz
Vinegar
2 Bay leaves
8 Cloves
8 Peppercorns
1 tbsp Brown Sugar
Salt
Instructions
1.
Preheat the oven to 180C, 350F, Gas mark 4 and lightly butter a shallow
ovenproof dish.
2.
Roll up the fillets starting from the tail and place in the buttered dish.
3.
Place the remaining ingredients in a large measuring jug or bowl and mix
well.
4.
Pour over the fish, cover with foil and bake for 20 minutes.
5.
To serve - remove from the oven and allow to cool. Serve cold.
