Salmon with Anchovies

Ingredients:
A
1kg/2lb Whole Salmon
6
Anchovy Fillets, chopped
1
tbsp Capers, chopped
2
tbsp Fresh Parsley, chopped
1
teasp Finely grated Lemon Rind
The
juice of 1/2 a Lemon
Instructions
1.
Preheat oven to 200C, 400F Gas mark 7. Mix together the anchovy, capers, parsley,
lemon rind and lemon juice.
2.
Make 4 or 5 diagonal slits on each side of the cleaned salmon the press the paste
into the cuts.
Season with pepper, wrap in oiled foil and seal loosely.

Bake for 45 minutes. Leave, wrapped, to rest 15 minutes. Serve immediately.
