Savoury Baked Fish  HT  MC  British  50mins

  

 

Serves  4      Hot   Fish  Pork   Main Course  Eggless  Britain  Europe

  

Ingredients:

450g/1lb Fish fillets, e.g. Cod, Haddock. Whiting, Pollack, Hake, Halibut, Coley

100g/4oz Streaky Bacon, chopped

2 Onions, sliced

50g/2oz Butter

1 level teasp Mixed herbs

1 tbsp Fresh Parsley, chopped

25g/1oz Flour

300ml/10fl.oz. Milk

75g/3oz  Cheddar Cheese

Salt and Pepper

25g/1oz Fresh White Breadcrumbs

4 Tomatoes, thickly sliced

 

Instructions

  

1. Preheat the oven to 180C, 350F, Gas mark 4 and lightly grease an ovenproof dish.

  

2. Wash the fish fillets under cold running water and dry on kitchen paper.

  

3. Melt half the butter in a frying pan, add the bacon and onions and sauté for

  

4. Drain the onions and bacon and spread evenly in the bottom of the ovenproof dish. Sprinkle the herbs over the onion mixture and place the fish fillets on top.

 

5. Melt the remaining butter in a saucepan, add the flour and cook for 1-2 minutes.

 

6. Remove the pan from the heat and gradually add the milk, a little at a time.

 

7. Remove from the heat and add the cheese, salt and plenty of pepper. Mix well until the cheese has melted then pour over the fish.

            

8. Sprinkle the breadcrumbs over the fish and sauce and bake for 15 minutes. 

 

9. Place the sliced tomatoes in a border around the edges of the baked fish, return to the oven and bake for a further 15-20 minutes until browned and crispy. Serve immediately.
