Smoked Cod Pie HT

Serves 4 Hot Fish Vegetables Main Course British Ireland Europe
Ingredients
1kg/2.2lb Potatoes, peeled and cut into chunks
Salt
25g/1oz Butter
25g/8oz Onion, chopped
25g/1oz Plain Flour
150ml/5fl.oz. Milk
150ml/5fl.oz. Single Cream
1 teasp Mustard Powder
450g/1lb Smoked Cod, cut into chunks
225g/8oz Frozen Green Peas
Instructions
1.
Preheat the oven to 200C, 400F, Gas Mark 6.
2.
Place the potato chunks in a large pan of salted water. Bring to the boil and
cook for about 20 minutes or until
very tender.
3. Meanwhile, melt the butter in a medium sized saucepan, add the onions and sauté until softened.
4. Sprinkle in the flour and mustard and cook for 1 minute stirring with a wooden spoon.
5. Gradually add the milk and cream stirring well between each addition. Cook over a medium heat, stirring constantly, until thickened.

Add the fish and peas mixing well then turn into an ovenproof dish. Set aside.
7.
Drain the potatoes well. Return to the pan and mash with a potato masher or fork
until smooth.
8. Use the mashed potato to cover the cod mixture and bake for 40-45 minutes until golden brown. Serve immediately.
