Ingredients:
175g/6oz Blue Stilton, crumbled
50g/2oz Fresh Breadcrumbs
1 onion, finely chopped
Salt and Pepper
4 Plaice Fillets, skinned
300ml/10fl.oz. Milk
1 level tbsp Plain Flour
15g/1/2 oz Butter
120ml/4fl.oz. Single Cream
2 tbsp Lemon Juice
Instructions
1. Preheat the oven to 190C, 375F, Gas Mark 5 and lightly butter a shallow ovenproof dish.
2. In a mixing bowl, mix together the Stilton, breadcrumbs, onion, salt and pepper until well blended. Divide into four, forming each portion into a cylinder about the same width as the plaice fillets.
3.Wrap a fillet of plaice around each stilton cylinder and place in the bottom of the greased dish. Pour the milk over the plaice, cover with foil and bake for 20 minutes.

Strain the milk from the dish into a small saucepan. Recover the plaice and keep
warm.

Continue to cook for 1 minute then stir in the cream and lemon juice. Season to
taste with salt and pepper.
7. To serve - transfer the plaice onto a heated platter and pour the sauce over the top. Serve immediately.
